Fish Tacos with Spicy Mango Salsa

Ingredient List

Fish
1 lb cod, sole or halibut
1/4 cup lemon juice
1/4 cup liquid or coconut aminos
1/4 cup avocado oil
1/4 cup cornmeal or flour (wheat, cassava, almond)
1 lime, cut in wedges
6 tortillas (corn, cassava, coconut, flour)


Salsa
1 mango, diced
1/2 cup red bell pepper, finely chopped
1 radish, finely chopped
1/4 cup red onion, finely chopped
1/4 cup chopped fresh cilantro
1 tbsp lime juice
2 tsp apple cider vinegar
1 tsp olive oil
1/4 tsp crushed red pepper or 1/2 jalapeño minced (optional)

Avocado Yogurt Sauce
1 avocado
1/2 cup plain Greek Yogurt (or DF plain cashew yogurt)
1 tsp Cajun or southwest seasoning
1 tsp lemon or lime juice


Directions

To prepare fish, combine liquid ingredients in medium bowl.  Add fish.  Marinate for about 1 hour.

Meanwhile, prepare salsa by combining all ingredients in a small bowl.  Cover and refrigerate until ready to serve.

In another small bowl, combine avocado, yogurt, seasoning and lemon/lime juice.  Mix well until everything is well blended.  Cover and refrigerate until ready.

Preheat oven to 400 degrees Fahrenheit.

Remove fish from marinade and place on a baking sheet or oven safe dish.  Top with flour or cornmeal.  Bake for 10-12 minutes until fish flakes.  Meanwhile wrap tortillas in foil and heat in oven.

To build taco, place about 1 tbsp avocado yogurt sauce on bottom, add fish, then top with mango salsa.  Garnish with lime wedge and Serve!
