Thyme Dijon Beet Dressing
Ingredient List
1 small baby beet, peeled and shredded
2 tsp Dijon Mustard
1/8 c Apple Cider Vinegar
¼ c Extra Virgin Olive Oil or Avocado Oil
1 tsp Fresh or Dried Thyme
2 tsp Lemon Juice, orange juice or lime juice
2 tsp Dijon Mustard
1/8 c Apple Cider Vinegar
¼ c Extra Virgin Olive Oil or Avocado Oil
1 tsp Fresh or Dried Thyme
2 tsp Lemon Juice, orange juice or lime juice
Directions
Combine everything but beets and oil in bowl, then whisk in oil followed by beets. Serve with your favorite salad, beet greens or use as a marinade over salmon!
