Coconut & Chocolate Chip Oatmeal Cookies

Ingredient List

1/3 cup gluten free rolled oats
1/3 cup gluten free oat flour (can be made from oats. Simply use a food processor or grinder until oats turn into a fine flour)
1/4 cup unsweetened coconut flakes
1/2 t baking soda
1/3 cup monk fruit sweetener (we used Lakanto brand)**
1 flax egg (1 T flax + 3 T warm water. Leave to gel for 15 minutes)
2 T coconut oil, melted
1 T maple syrup
1 T vanilla extract
1/2 cup 70% ( or darker) dark chocolate chips


**You can use any kind of sugar you have on hand if you don’t have monk fruit! But keep in mind, regular sugar will raise the glycemic index!

Directions

  1. Preheat oven to 350 degrees.
  2. Combine dry ingredients
  3. Add wet ingredients and stir until a dough forms.
  4. Fold in chocolate chips
  5. Drop rounded tablespoons onto a baking stone
  6. Bake for 13-15 minutes until desired crispness achieved
  7. Cool on the baking stone for several minutes, then transfer to a wire rack and allow to cool completely
