Baked Halibut with Salsa Verde, Bell pepper and Lime Cilantro Salsa
Ingredient List
1 lb Halibut
2 tsp avocado oil, plus 1 tsp
2 limes
1/2 orange pepper, finely chopped
1/2 yellow pepper, finely chopped
1/4 cup red onion, finely chopped
1 tsp jalapeño, finely chopped
1 tsp apple cider vinegar, red wine vinegar or white wine vinegar
2 garlic cloves, minced
2 tbsp fresh cilantro, finely chopped
1/2 cup salsa verde** (optional)

2 tsp avocado oil, plus 1 tsp
2 limes

1 tsp apple cider vinegar, red wine vinegar or white wine vinegar
2 garlic cloves, minced
2 tbsp fresh cilantro, finely chopped
1/2 cup salsa verde** (optional)

Directions
- Preheat oven to 450 degrees F.
- Cut fish into two 8-oz pieces. Combine in a small bowl, the juice of 1 lime, 1 tsp avocado oil, 1 minced garlic clove. Place halibut in a glass baking dish and pour marinade on top. Season with salt and pepper. Cover and place in fridge for 30 minutes.
- Meanwhile, prepare salsa. Combine remaining ingredients in a small bowl and mix well. Start with peppers, garlic, jalapeno, garlic cilantro and onion. Add lime juice, vinegar and remaining 2 tsp avocado oil. Mix well. Cover and place in fridge until fish is ready.
- Remove fish from the fridge and place in oven for 12-15 minutes until fish flakes with a fork.
- Serve fish with pepper salsa and **salsa verde. Enjoy!
