Mediterranean Baked Cod with Olives, Capers and Tomatoes

Ingredient List

1 lb Cod
1/4 cup chopped Spanish olive with pimentos
2 Tbsp capers
1 small Roma tomato, diced*
2 tbsp chopped onion*
1 tbsp extra virgin olive oil*
2 tsp lemon juice or white wine vinegar*
1 tbsp fresh chopped parsley
sea salt
1-2 tsp avocado oil


Preheat oven to 400 degrees F.

Place fish in a baking dish and drizzle with avocado oil.  Salt and pepper to taste. Place in oven for 10-12 minutes until it flakes.

Meanwhile, combine olives, cappers, tomatoes, lemon juice, olive oil and parsley in a small bowl.  Mix well to combine.

Remove cod from the oven and top with olive mixture.  Serve.

**store bought bruschetta can be used to replace tomatoes, onion, lemon juice and olive oil.  We like Trader Joe’s!
