Tuscan Kale and Strawberry Salad with Fresh Basil, Mint and Pinenuts
Ingredient List
1 head Tuscan Kale, washed and dried
1 cup organic Strawberries, sliced
1/4 cup sliced red onion
2 tbsp fresh basil, chopped
2 tbsp fresh mint, chopped
1/4 cup crumbled goat cheese or feta (optional)
2 tbsp pine nuts
Dressing:
1 tsp honey
1 garlic clove, minced
1 tbsp lemon juice
2 tbsp apple cider vinegar
1/4 cup extra virgin olive oil
sea salt
freshly ground pepper
1 cup organic Strawberries, sliced
1/4 cup sliced red onion

Dressing:
1 tsp honey
1 garlic clove, minced
1 tbsp lemon juice
2 tbsp apple cider vinegar
1/4 cup extra virgin olive oil
sea salt
freshly ground pepper
Directions
Step 1. Wash and dry Kale well. Remove stems and finely chop.
Step 2. Prepare dressing. Combine honey, garlic, lemon juice, salt, pepper and vinegar in small bowl. Using a whisk, pour in oil until well mixed.
Step 3. In a large bowl, combine Kale, and dressing. Mix well with hands or salad tongs until evenly coated. Add in strawberries, onion, basil and mint. Top with cheese and pine nuts. Serve.
