Peanut, Tahini and Ginger Dressing

Ingredient List

2 Tbsp Natural Peanut Butter (or cashew, almond or sun butter)
2 tsp tahini
1-2 tsp lime juice
1/4 tsp maple syrup (optional)
1 tsp coconut or liquid aminos (can also use tamari)
1 tsp fresh grated ginger or ground
1/8-1/4 cup water


In a bowl, combine all ingredients but water.  Whisk together well then slowly add in water whisking continuously until desired consistency.

Serve as a dip or dressing over a Veggie Buddha Bowl.

Building your Bowl:

Grain:  quinoa, rice, kasha, amaranth, noodles

Veggie:  raw or roasted carrots, kale, cauliflower, mushrooms, broccoli, beets, eggplant, zucchini, spinach (use some or all of the above!)

Protein:  Beans, tofu, tempeh, chicken, shrimp, fish, grass-fed beef

Prepare as in a bowl or as a platter.  Serve for lunch, dinner or as a beautiful centerpiece side dish!  Enjoy!
