Quinoa Patties with Shredded Carrots and Green Onions

Ingredient List

1 cup quinoa
2 cups water
1 tbsp avocado oil
½ cup shredded carrots
¼ cup chopped green onions
¼ cup chopped fresh parsley or 1 tbsp dried parsley
¼ tsp sea salt
¼ tsp black pepper
½ cup cassava flour, almond flour or whole wheat flour (could substitute bread crumbs as well)
3 eggs, lightly beaten (can substitute ground flaxseed with water for eggs 1 egg=1 tbsp ground flax + 3 tbsp water)

Directions

Step 1.  Prepare quinoa by combining quinoa and water in a pan, bring to a boil then cover and turn heat down to simmer for about 15 minutes.  Set aside and allow to cool.

Step 2.  Combine quinoa, carrots, onions, parsley, salt and pepper in a medium bowl.  Add eggs and mix well to coat.  Add in flour and mix.

Step 3.  Heat oil in a medium pan (stainless steel or cast iron work fine!)

Step 4.  Form small 4” patties and add to pan with oil.  Allow to cook on each side for about 3-5 minutes until golden brown and crisp.  May need to add a little more oil.

Step 5.  Remove and serve over a salad, veggies or with our Tzatziki Dill Sauce
