No Bake Peanut Butter Bars

Ingredient List

1 cup natural peanut butter (ingredients should be peanuts and salt and it should be drippy)
1/4 cup honey
1/2 t vanilla extract
1 T chia seeds
1 T ground flax seed
1 T chia seeds
3/4 cup rolled oats (gluten free if necessary)
1/2 cup 70% dark chocolate chips (or a 4 oz. 70% dark chocolate bar)
1/2 T coconut oil
Salt for sprinkling (optional)


  1. Combine peanut butter, honey, vanilla, chia seeds, flax seeds, hemp seeds and oats in a food processor. Process until combined. You may need to scrape down the sides of the food processor as you go.
  2. Line a regular sized loaf pan with parchment or wax paper for easy removal. Firmly press the mixture into the loaf pan.
  3. Melt the chocolate with the coconut oil in a microwave safe bowl (around 2, 30 second intervals), or in a glass bowl over the sauce pan of boiling water.
  4. Pour the melted chocolate into the loaf pan, tilting it until the peanut butter mixture is covered.
  5. Place in the fridge for at least an hour.
  6. Slice into 10 bars, wrap in parchment paper and store in the fridge or freezer.
