Crunchy Granola {Gluten Free}

Ingredient List

2 cups GF rolled oats (we like Bob’s Red Mill or One Degree Organics)
1.5 cups raw nuts and seeds of choice, chopped (i.e. pepitas, sunflower seeds, sliced almonds, pecans, walnuts or whatever you have!)
1/3 cup uncooked quinoa, amaranth, buckwheat groats, millet (or a combo, rinsed)
2 t ground cinnamon
1 t nutmeg
1/4 t sea salt
1 tsp pure vanilla extract
1/3 cup coconut oil, melted
1/4 cup pure maple syrup


  1. Preheat oven to 300 degrees
  2. Line a baking sheet with parchment paper or use a silicone baking mat
  3. Mix wet and dry ingredients separately
  4. Add wet ingredients into dry and combine until dry ingredients are coated
  5. Press mixture onto baking sheet. Really pack the mixture down using a flat bottomed dish.
  6. Bake for 40-45 minutes. Let cool untouched for 30 minutes, then break apart into granola clusters.
  7. Store in the fridge for up to 2 weeks!
