Banana Bread Cookies (GF, Grain Free)

Ingredient List

Wet Ingredients:
1 medium ripe banana, mashed
2 T melted coconut oil or grass-fed butter, cooled
1 egg
1/2 t vanilla extract
1/4 cup original monk fruit sweetener (regular or coconut sugar works too!)

Dry Ingredients:
1 cup almond flour
1/4 cup + 2 T coconut flour
1/2 t cinnamon
1/4 t salt
1/2 t baking soda


  1. Preheat oven to 350 degrees. Either line a baking tray with parchment or use a baking stone
  2. Mix banana, coconut oil or butter, egg, vanilla extract and monk fruit together.
  3. Add dry ingredients until incorporated but do not over mix. Let mixture chill for 5 minutes.
  4. Form into golf ball sized balls (dough makes around 12 cookies), place on baking stone or tray and flatten slightly with palm of your hand.
  5. Bake for 10 minutes until just golden brown on top. Let cool completely on tray before transferring to container. Cookies will be soft and have a banana bread like feel.
  6. Freeze or refrigerate if not consumed within a day or two.
