No Bake Peanut Butter Bars
Ingredient List
1 cup natural peanut butter (ingredients should be peanuts and salt and it should be drippy)
1/4 cup honey
1/2 t vanilla extract
1 T chia seeds
1 T ground flax seed
1 T chia seeds
3/4 cup rolled oats (gluten free if necessary)
1/2 cup 70% dark chocolate chips (or a 4 oz. 70% dark chocolate bar)
1/2 T coconut oil
Salt for sprinkling (optional)

Directions
- Combine peanut butter, honey, vanilla, chia seeds, flax seeds, hemp seeds and oats in a food processor. Process until combined. You may need to scrape down the sides of the food processor as you go.
- Line a regular sized loaf pan with parchment or wax paper for easy removal. Firmly press the mixture into the loaf pan.
- Melt the chocolate with the coconut oil in a microwave safe bowl (around 2, 30 second intervals), or in a glass bowl over the sauce pan of boiling water.
- Pour the melted chocolate into the loaf pan, tilting it until the peanut butter mixture is covered.
- Place in the fridge for at least an hour.
- Slice into 10 bars, wrap in parchment paper and store in the fridge or freezer.
