Instant Pot Southwest Quinoa

Ingredient List

2 T avocado or olive oil
1 small onion, diced
1 bell pepper, diced
1 tsp. garlic powder
1 tsp. salt
1 tsp. cumin
1 cup quinoa, uncooked and rinsed
1 cup water or broth
1 cup salsa (choose a low sugar option!)
1 can beans, rinsed

Directions

  1. Using the sauté feature on the instant pot, heat oil for 1-2 minutes
  2. Add onions and peppers and cook for several minutes until softened
  3. Add spices and let cook another minute. Hit the ‘cancel’ button to turn the pot off.
  4. Add water/broth, salsa and uncooked quinoa. Stir together.
  5. Put lid on instant pot and lock into position. Choose the quinoa setting and hit start.
  6. Once the instant pot is finished cooking it will switch over to the ‘keep warm’ setting. Allow the instant pot to naturally release pressure to ensure the quinoa absorbs all the liquid. The pink float should be down when de-pressurized.
  7. Once the instant pot has de-pressurized, fluff quinoa and stir in beans.
  8. Serve warm with toppings of choice (sour cream, avocado, cheese, lettuce, etc.)
