Honey-Ginger and Lime Cilantro Shrimp

Ingredient List

1 lb fresh wild shrimp (U.S Pacific or Atlantic coast recommended)
2 Tbsp fresh lime juice (1 whole lime)
1 tsp freshly grated ginger
1 tsp honey
2 tsp avocado oil
2 Tbsp cilantro, chopped and divided
2 tsp coconut oil
Dash cayenne
Sea Salt and pepper

Directions

  1. Combine lime juice, ginger, honey and avocado oil in small bowl.
  2. Add Shrimp and mix well to coat.  Add dash of cayenne.  Season with salt and pepper and mix well.  Add half of the fresh cilantro.
  3. Marinate for about 20-30 minutes.
  4. Heat coconut oil in a medium sauté pan.  Add shrimp.  Cook until pink on all sides and tails curl, about 4-5 minutes. Garnish with remaining cilantro.
  5. Serve with tacos, over greens or rice and veggies!
    Serves 4.
