Beet Hummus

Ingredient List

1 large roasted beet
2 (or more) cloves garlic
14 oz can chickpeas, washed and drained
2 tbsp tahini
2 tbsp fresh lemon juice
1 tbsp olive oil
1 tbsp sesame oil
1 tsp cumin
Sea Salt


  1. Preheat oven to 400 degrees F.  Wash beet well.  Place beet in a small oven dish (i.e., 8 x8 baking dish) and fill with about 1 cup water.  Cover with foil and bake for about 45 minutes until beet is soft.  Allow to cool and remove skin.
  2. Combine beets and garlic in food processor.  Then add in remaining ingredients.  Mix well to combine scraping the sides as needed.  Add water if needed to help smoothen the texture.
  3. Place in small serving bowl and top with sesame seeds or everything but the bagel seasoning.  Serve with chopped veggies, crackers or pita.
