Honey-Ginger and Lime Cilantro Shrimp
Ingredient List
1 lb fresh wild shrimp (U.S Pacific or Atlantic coast recommended)
2 Tbsp fresh lime juice (1 whole lime)
1 tsp freshly grated ginger
1 tsp honey
2 tsp avocado oil
2 Tbsp cilantro, chopped and divided
2 tsp coconut oil
Dash cayenne
Sea Salt and pepper

Directions
- Combine lime juice, ginger, honey and avocado oil in small bowl.
- Add Shrimp and mix well to coat. Add dash of cayenne. Season with salt and pepper and mix well. Add half of the fresh cilantro.
- Marinate for about 20-30 minutes.
- Heat coconut oil in a medium sauté pan. Add shrimp. Cook until pink on all sides and tails curl, about 4-5 minutes. Garnish with remaining cilantro.
- Serve with tacos, over greens or rice and veggies!
