Coconut & Chocolate Chip Oatmeal Cookies
Ingredient List
1/3 cup gluten free rolled oats
1/3 cup gluten free oat flour (can be made from oats. Simply use a food processor or grinder until oats turn into a fine flour)
1/4 cup unsweetened coconut flakes
1/2 t baking soda
1/3 cup monk fruit sweetener (we used Lakanto brand)**
1 flax egg (1 T flax + 3 T warm water. Leave to gel for 15 minutes)
2 T coconut oil, melted
1 T maple syrup
1 T vanilla extract
1/2 cup 70% ( or darker) dark chocolate chips
**You can use any kind of sugar you have on hand if you don’t have monk fruit! But keep in mind, regular sugar will raise the glycemic index!

Directions
- Preheat oven to 350 degrees.
- Combine dry ingredients
- Add wet ingredients and stir until a dough forms.
- Fold in chocolate chips
- Drop rounded tablespoons onto a baking stone
- Bake for 13-15 minutes until desired crispness achieved
- Cool on the baking stone for several minutes, then transfer to a wire rack and allow to cool completely
