Cauliflower Tater Tots

Ingredient List

1 head medium cauliflower, cut into florets (about 3-4 cups)
1 egg
Half a small onion, grated
1/4 cup blanched almond flour
1 T sriracha or hot sauce
1/4 cup shredded parmesan
1/4 cup shredded white cheddar
Olive oil or avocado oil cooking spray
Salt and Pepper


  1. Preheat your oven to 400 degrees F and line a baking sheet with parchment paper or silicone baking mat.
  2. Steam your cauliflower either in a steaming basket in the microwave (or on the stove using a stovetop steamer basket above an inch of boiling water in a saucepan) until fork tender.
  3. Place your steamed cauliflower in a food processor (splitting into two batches if necessary), until no large chunks remain.
  4. Transfer the cauliflower to a cheese cloth or thin dish towel above a clean bowl in the sink. Let cauliflower cool down before handling. Then gather the corners of the towel and squeeze as much moisture out of the cauliflower as possible. Place the cauliflower in a large bowl.
  5. Add egg, sriracha, grated onion, almond flour, parmesan, cheddar and salt and pepper to taste and combine with a spatula. Let sit for several minutes.
  6. Form tater tots (about 1 inch long) from the mixture and place on your baking sheet.  Spray the tots with avocado or olive oil.
  7. Bake for 20 minutes, then flip and bake another 5-10 minutes until browned.
  8. Serve hot!
