Brownie Protein Pancakes {Vegan, GF,DF}
Ingredient List
3 T. ground flax seed
1/2 cup water
3/4 cup plant based chocolate protein powder
3/4 cup chickpea flour
2 T. cocoa powder
1 T. baking powder
1 tsp. vanilla
1 1/2 cup unsweetened almond milk
Coconut oil
Optional: Dark chocolate chips

Directions
- Whisk flax seed and water together in a small bowl and set aside to thicken for 5 minutes
- Combine protein powder, chickpea flour, cocoa powder and baking powder in a large bowl
- Add almond milk, vanilla and flax mixture to the dry ingredients and stir until a batter forms. Fold in dark chocolate chips if desired
- Heat a medium sized skillet or griddle and add 1 teaspoon coconut oil
- Drop 1/4 cup of the batter on heated skillet and cook 3-4 minutes per side
- Repeat until batter is gone, using more coconut oil between batches if needed
- Keeps in fridge for 3 days or freeze and reheat in a toaster
