Brownie Protein Pancakes {Vegan, GF,DF}

Ingredient List

3 T. ground flax seed
1/2 cup water
3/4 cup plant based chocolate protein powder
3/4 cup chickpea flour
2 T. cocoa powder
1 T. baking powder
1 tsp. vanilla
1 1/2 cup unsweetened almond milk
Coconut oil
Optional: Dark chocolate chips


  1. Whisk flax seed and water together in a  small bowl and set aside to thicken for 5 minutes
  2. Combine protein powder, chickpea flour, cocoa powder and baking powder in a large bowl
  3. Add almond milk, vanilla and flax mixture to the dry ingredients and stir until a batter forms. Fold in dark chocolate chips if desired
  4. Heat a medium sized skillet or griddle and add 1 teaspoon coconut oil
  5. Drop 1/4 cup of the batter on heated skillet and cook 3-4 minutes per side
  6. Repeat until batter is gone, using more coconut oil between batches if needed
  7. Keeps in fridge for 3 days or freeze and reheat in a toaster
