Magic Bars {GF, DF}

Ingredient List

1 cup oats (certified gluten free)
1/2 cup chopped walnuts
2-3 tsp cinnamon
Pinch salt
2 T sweetener (sugar, coconut sugar or monk fruit) – you can use more or less to your taste
1/3 cup full fat coconut milk
1/4 cup chocolate chips (we like Lily’s brand!)
3 T unsweetened coconut flakes
Handful oats (for sprinkling on top at the end)


  1. Preheat oven to 350 degrees F and line a standard loaf pan with parchment paper
  2. Place dry ingredients in a food processor and combine until no large chunks remain
  3.  Add 3/4 of the coconut milk and process until you get a wet dough like consistency
  4. Press the dough into the loaf pan
  5. Sprinkle coconut flakes and chocolate chips on top, then drizzle the remaining coconut milk over the top
  6. Top with handful of oats
  7. Bake for 20-25 minutes until top of the bars start to brown and coconut flakes look toasted
  8. Let cool completely in pan, then remove using parchment paper liner and slice
  9. These keep well in the fridge or freezer!
