Zucchini Fritters {GF}
Ingredient List
2 medium zucchini, grated
1 egg
1/4 cup GF all purpose flour (We used King Arthur Paleo Baking Flour)
1/4 cup grated parmesan or nutritional yeast
1 tsp. garlic powder
Salt and pepper to taste

Directions
- Grate the zucchini into a thin clean dish towel. Squeeze out all excess moisture. ** This step is VERY important as it helps keep your fritters from being soggy
- Add zucchini to a medium bowl. Add beaten egg, flour, parmesan (or nutritional yeast) along with garlic powder, salt and pepper and combine thoroughly.
- Add 1-2 T. avocado oil to a medium skillet and heat over medium heat
- Use an ice cream scoop to drop zucchini mixture into the skillet. Use the back of a spatula to press down gently.
- Cook several minutes until browned and easy to flip over, then flip over and cook until desired doneness.
- Serve hot!
