Vegetarian Split Pea Soup

Ingredient List

16 oz dried green peas
6 cups water
1 tbsp extra virgin olive oil
1/4 tsp red pepper flakes (optional)
2 cloves fresh garlic, minced
2 carrots, diced
2 celery stalks, diced
1/2 cup onion, diced
2 tsp smoked paprika
1 tsp cumin
1/2 tsp turmeric
1 tsp sea salt (optional)
Freshly ground pepper


  1. Heat oil in medium sauce pan.  Add garlic, onion, carrots , celery and crushed red pepper.  Sauté for about 3-5 minutes.
  2. Add, paprika, cumin and turmeric and sauté for another 2 minutes.   Add peas and mix well.
  3. Add water, salt and pepper.  Bring to a boil.
  4. Turn heat to low, cover half way and simmer for 35-40 minutes or until peas are cooked.
  5. Remove from heat.  Season to taste.
