Veggie Chili with Pumpkin

Ingredient List

1 28-oz can chopped tomatoes
1 15-oz cans kidney beans
1 15 oz can black beans
1 15 oz can garbanzo beans
1 cup canned pumpkin
1 green bell pepper, diced
1 cup sliced mushrooms
1 tsp red pepper flakes (optional)
1-2 Tbsp chili powder
1 tsp cumin
1 tsp chia seeds
3 cloves garlic, minced
1 ½ cups chopped onion


Sauté garlic, onion and pepper in olive oil for 5 minutes. Add red pepper flakes and sauté for 1 minute. Add cumin, chili powder tomatoes, pumpkin, mushrooms and beans. Turn up heat and bring to a boil. Add chia seeds. Simmer for at least 15-20 minutes.
