Sweet Potato Muffins with Almond Butter
Ingredient List
1 small sweet potato, peeled and cubed
1/2 cup applesauce
1/4 cup almond butter
2 eggs, whisked
2 tbsp 100 % maple syrup
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp ground or freshly grated ginger
1/2 cup almond flour
1/2 tsp baking powder

Directions
- Add the sweet potato to a steamer basket or metal strainer over boiling water and steam for eight to 10 minutes or until very tender. Transfer the cooked sweet potato to a mixing bowl and mash it until smooth. Let the sweet potatoes cool slightly.
- Preheat oven to 350F and line a muffin pan with baking cups
- Combine applesauce, maple syrup, vanilla and egg in the same bowl as the sweet potato. Add in cinnamon, ginger, almond flour and baking powder. Stir until well mixed.
- Evenly spread the mixture into muffin liners. Bake for 18-20 minutes or until firm to the touch. Makes about 10 muffins.
