Sweet Potato Muffins with Almond Butter

Ingredient List

1 small sweet potato, peeled and cubed
1/2 cup applesauce
1/4 cup almond butter
2 eggs, whisked
2 tbsp 100 % maple syrup
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp ground or freshly grated ginger
1/2 cup almond flour
1/2 tsp baking powder


  1. Add the sweet potato to a steamer basket or metal strainer over boiling water and steam for eight to 10 minutes or until very tender. Transfer the cooked sweet potato to a mixing bowl and mash it until smooth. Let the sweet potatoes cool slightly.
  2. Preheat oven to 350F and line a muffin pan with baking cups
  3. Combine applesauce, maple syrup, vanilla and egg in the same bowl as the sweet potato.  Add in cinnamon, ginger, almond flour and baking powder.  Stir until well mixed.
  4. Evenly spread the mixture into muffin liners.  Bake for 18-20 minutes or until firm to the touch.  Makes about 10 muffins.
