Roasted Whole Carrots with Fresh Cilantro

Ingredient List

1 bunch whole organic carrots with tops
2 tsp avocado oil
dash salt and pepper
1 tbsp freshly chopped cilantro
1 oz feta (can use dairy free too, we like **Violife!)


Preheat oven to 375 degrees Farenheit.

Chopp off just the greens and scrub carrots well.  Toss in avocado oil, add salt and pepper, and spread evenly on a baking sheet.  Place in oven for about 15-20 minutes until carrots begin to turn golden.  Remove from oven and transfer to serving dish. Evenly spread fresh cilantro and feta if using.

Tip:  Use leftover carrot top greens to make a carrot pesto, toss in salad or enjoy as a garnish.
