Roasted Cauliflower & Feta Salad

Ingredient List

Salad:
1 large head cauliflower, cut into bite size florets
1 large red bell pepper, diced
8 oz. block feta cheese, cut into cubes

Dressing:
3 T fresh lemon juice
4 T avocado or olive oil
2-3 cloves garlic, minced
Black pepper & salt to taste
*If you have fresh herbs, use 1 teaspoon or more. If using dried, use a 1/2 teaspoon of each:
Thyme
Oregano
Rosemary
Greek basil

Directions

  1. Preheat oven to 425 degrees
  2. Whisk dressing ingredients together
  3. Toss cauliflower and red pepper in dressing and spread in even layer on a baking tray
  4. Roast for 30 minutes until cauliflower starts to brown
  5. Let cool for 15 minutes then toss with feta and enjoy!
