Grain Free Banana Muffins

Ingredient List

1 cup mashed ripe bananas (around 2-3 medium sized bananas)
1/4 cup unsweetened almond milk
1 egg
1 t vanilla
1/4 cup natural peanut butter
2 T ground flaxseed
2 scoops grass fed collagen powder
1 cup almond flour
1/4 cup coconut flour
1 t baking soda
1/2 t cinnamon
1/4 t salt
1/4 cup dark chocolate chips


Preheat oven to 350 degrees. Line a muffin tin with liners. In a large bowl, combine mashed bananas with flaxseed, egg, vanilla, almond milk and peanut butter. In another bowl, combine collagen, almond flour, coconut flour, baking soda, salt and cinnamon. Add dry ingredients to wet and combine thoroughly, stirring in the chocolate chips at the end. Fill muffin cups 3/4 of the way full. Bake 18-20 minutes until tooth pick inserted in the center comes out clean. Let cool, remove from liners and store in the fridge. Enjoy!
