Gluten Free Sweet Potato Brownies
Ingredient List
1 medium sweet potato, cooked and pureed
1 cup natural peanut butter
1 tsp pure vanilla extract
1 T avocado oil
1/4 cup + 2 T oat flour (May grind rolled oats or buy premade oat flour)
1/2 cup dark chocolate chips
2/3 cup coconut or brown sugar
1/4 cup + 2 T cocoa powder
1 1/2 tsp baking soda
1/8 tsp salt

Directions
Preheat oven to 325 F. Line an 8-inch pan with parchment paper or grease well. Gently heat peanut butter in microwave until easily stir-able. Use an electric mixer to mix sweet potato, peanut butter, avocado oil and vanilla extract in a large bowl. In a separate bowl, mix dry ingredients. Pour dry into wet, stir in chocolate chips and smooth into the prepared pan. Batter will be thicker than normal brownie batter, almost like a cookie dough consistency. Bake on the center oven rack for 20-25 minutes. It will look a little underdone, but it firms up as it cools. I put in the refrigerator to allow to cool completely before cutting. Enjoy!
