GF Garlic Sriracha Chicken Meatballs (With Creamy Cauliflower!)

Ingredient List

For the meatballs:
1 lb. ground chicken (preferably organic and humanely raised)
1/4 cup GF breadcrumbs (Can sub coconut flour if grain free)
1/4 cup parmesan (Can sub nutritional yeast if dairy free)
1 egg
2 T hot Sriracha sauce (or regular Sriracha if less heat is desired. Can also use Cholula or regular hot sauce!)
2 teaspoons garlic powder
1/4 t salt
1/2 t black pepper


For the meatballs:

  1. Preheat oven to 400 degrees. Line a baking sheet with foil or use a baking stone.
  2. Mix all ingredients except for the ground chicken. Add ground chicken and use your hand to combine thoroughly.
  3. Roll into tablespoon sized balls and bake for 18-20 minutes until cooked through, and brown on top.
