Creamy Cauliflower Puree

Ingredient List

1 head cauliflower, stems and core removed, florets roughly chopped
1 tbsp EVOO, avocado oil or grass-fed butter
¼ cup organic plan Greek yogurt or plain dairy free yogurt
2 roasted garlic cloves**


Step 1.  Steam cauliflower in medium pot for 10-15 minutes until very tender. Remove cauliflower from pot and place in blender of food processor. Reserve about 1-2 tbsp of liquid from pot.

Step 2.  Blend cauliflower until smooth with liquid. Add butter or oil, Greek yogurt and garlic.

Step 3.  Blend until well mixed. Serve.

**To make roasted garlic, cut off the top of the bulb and add about 1 tsp of avocado oil. Wrap tightly in foil and place in a 375-degree preheated oven for about 45 minutes.

Can make the day before and store in a glass oven safe dish. Place in oven to reheat before serving.
