Flax & Almond Flour Banana Bread
Ingredient List
3 ripe bananas, mashed
1 t vanilla extract
3 eggs
3 T unsweetened almond milk (or dairy free milk of choice)
2 1/4 cups almond flour
3/4 cup ground flaxseed
1 t cinnamon
1/2 t nutmeg
1 t baking soda
1/2 t salt
1/2 cup dark chocolate chips (dairy free if desired) + more for sprinkling on top

3/4 cup ground flaxseed

1 t baking soda
1/2 t salt
1/2 cup dark chocolate chips (dairy free if desired) + more for sprinkling on top
Directions
- Preheat oven to 350 degrees on convection setting. Use a loaf sized baking stone or line a regular loaf pan with parchment paper. Grease the parchment paper with avocado or olive oil spray if possible, otherwise can use non-stick cooking spray.
- Mash bananas and add eggs, vanilla, and almond milk.
- Add remaining dry ingredients and combine thoroughly.
- Fold in the chocolate chips.
- Spread in loaf pan and smooth out with a spatula. Sprinkle extra chocolate chips on top if desired
- Bake for about 50 minutes or until knife inserted in the center comes out clean.
- Allow to cool in pan for 10-15 minutes, then transfer to a wire rack to cool completely.
- Bread keeps okay at room temperature for a day or two, but then transfer to fridge or freezer!
