Creamy Cilantro Beet Puree
Ingredient List
2 large beets
2 tbsp fresh cilantro
1 tsp Apple Cider Vinegar
1 tbsp freshly squeezed lemon juice
1 tbsp chopped shallots or red onion
2 tsp olive oil or avocado oil
¼ tsp sea salt

Directions
- Preheat oven to 400 degrees F
- Cut off top of beets ( where greens are or would be if buying without greens).
- Place in small oven proof dish with about ½ cup water. Cover with foil and bake for about 50 minutes to 1 hour until tender with a fork.
- Remove from oven and allow to cool. Remove peel-it should come off easily with hands
- Place all remaining ingredients in blender and puree until smooth.
- Enjoy with Roasted Carrots, over Salmon or as a dressing
