Classic Tomato and Cucumber Salad with Fresh Dill and Feta

Ingredient List

1 large tomato, chopped in
1 small cucumber, peeled, sliced and quartered
1/4 cup thinly sliced onion
1 garlic clove, minced
Sea Salt
Freshly ground pepper
2 tbsp. fresh chopped dill
1 tbsp. vinegar of choice (apple cider, balsamic, rice, red wine)
2 tsp extra virgin olive oil
1 oz feta (optional)


Add onion to small bowl.  Add 1/2 tsp water and a sprinkle of salt.  Using hands, massage onion in salt water.  Combine remaining ingredients, except the feta.  Season to taste.  Sprinkle with feta and serve as a side with grilled meat, fish or your favorite sandwich.
