Chickpea Chocolate Chip Cookie Dough
Ingredient List
1 1/2 cups cooked chickpeas
1/4 cup 100% maple syrup, monk fruit or stevia
1 tsp vanilla
1/2 tsp cinnamon
1/2 cup rolled oats or 1/2 cup almond flour
1/4 cup almond milk (or more as needed)
1 tsp chia seeds
1/4 tsp salt
1/2 cups dark chocolate chips (we like Lily’s) or chocolate bar broken in pieces

1/4 cup almond milk (or more as needed)
1 tsp chia seeds
1/4 tsp salt
1/2 cups dark chocolate chips (we like Lily’s) or chocolate bar broken in pieces
Directions
Combine all ingredients but the chocolate chips in a blender until well mixed. Add more liquid as needed so that mixture is well blended but still thick. Add in chocolate and stir. Cover and refrigerate for at least 1 hour. The longer the better! Enjoy within 5 days (if it lasts that long!)
Serve alone or with Frozen Greek yogurt!
