Beet Hummus
Ingredient List
1 large roasted beet
2 (or more) cloves garlic
14 oz can chickpeas, washed and drained
2 tbsp tahini
2 tbsp fresh lemon juice
1 tbsp olive oil
1 tbsp sesame oil
1 tsp cumin
Sea Salt
Water

Directions
- Preheat oven to 400 degrees F. Wash beet well. Place beet in a small oven dish (i.e., 8 x8 baking dish) and fill with about 1 cup water. Cover with foil and bake for about 45 minutes until beet is soft. Allow to cool and remove skin.
- Combine beets and garlic in food processor. Then add in remaining ingredients. Mix well to combine scraping the sides as needed. Add water if needed to help smoothen the texture.
- Place in small serving bowl and top with sesame seeds or everything but the bagel seasoning. Serve with chopped veggies, crackers or pita.
