GF Garlic Sriracha Chicken Meatballs (With Creamy Cauliflower!)
Ingredient List
For the meatballs:
1 lb. ground chicken (preferably organic and humanely raised)
1/4 cup GF breadcrumbs (Can sub coconut flour if grain free)
1/4 cup parmesan (Can sub nutritional yeast if dairy free)
1 egg
2 T hot Sriracha sauce (or regular Sriracha if less heat is desired. Can also use Cholula or regular hot sauce!)
2 teaspoons garlic powder
1/4 t salt
1/2 t black pepper

Directions
For the meatballs:
- Preheat oven to 400 degrees. Line a baking sheet with foil or use a baking stone.
- Mix all ingredients except for the ground chicken. Add ground chicken and use your hand to combine thoroughly.
- Roll into tablespoon sized balls and bake for 18-20 minutes until cooked through, and brown on top.
