Vegetable Turkey Lentil Stew

Ingredient List

1 cup dried lentils, washed
1 carrot, diced
1 celery stalk, diced
1 pint cherry tomatoes
½ cup chopped onion
2 garlic cloves, minced
4 cups vegetable, chicken stock or bone broth**
Turkey bones or carcass (optional)
1 tbsp fresh thyme
2 tsp turmeric
Freshly ground pepper
Sea salt
1 lemon, cut in wedges


In large pot or Dutch oven, sauté onion and garlic in 1 tbsp olive oil for 2 minutes. Add celery, tomatoes and carrot. Sauté for 2-4 minutes. Add lentils, turkey (if using) and broth. Stir to combine. Heat until liquid boils then turn down to simmer. Cover pot with a lid slightly tilted for a minimum of 30-35. minutes. Stir occasionally.  Serve alone or over rice, quinoa or other grain and a lemon wedge.
