Shaved Brussels Sprout Salad

Ingredient List

1 lb Brussels Sprouts
1 tbsp Dijon Mustard
2 tsp Apple Cider Vinegar
2 tsp fresh lemon juice
1/4 tsp garlic powder
Sea Salt
Fresh Ground Pepper
1/4 cup Nutritional Yeast or Dairy Free Parmesan*


  1.  Wash and dry the Brussels Sprouts.  Holding stem, begin to thinly chop Brussels until they are about 1/2″ from stem.  Toss stem and place shaved sprouts in medium bowl
  2. Combine mustard, vinegar, lemon juice, oil and garlic powder in small bowl.  Whisk together.  Season with salt and pepper
  3. Add to Brussels and mix well.  Top with nutritional yeast or parmesan.
