Shaved Brussels Sprout Salad
Ingredient List
1 lb Brussels Sprouts
1 tbsp Dijon Mustard
2 tsp Apple Cider Vinegar
2 tsp fresh lemon juice
1/4 tsp garlic powder
Sea Salt
Fresh Ground Pepper
1/4 cup Nutritional Yeast or Dairy Free Parmesan*

Directions
- Wash and dry the Brussels Sprouts. Holding stem, begin to thinly chop Brussels until they are about 1/2″ from stem. Toss stem and place shaved sprouts in medium bowl
- Combine mustard, vinegar, lemon juice, oil and garlic powder in small bowl. Whisk together. Season with salt and pepper
- Add to Brussels and mix well. Top with nutritional yeast or parmesan.
