Roasted Cauliflower & Feta Salad
Ingredient List
Salad:
1 large head cauliflower, cut into bite size florets
1 large red bell pepper, diced
8 oz. block feta cheese, cut into cubes
Dressing:
3 T fresh lemon juice
4 T avocado or olive oil
2-3 cloves garlic, minced
Black pepper & salt to taste
*If you have fresh herbs, use 1 teaspoon or more. If using dried, use a 1/2 teaspoon of each:
Thyme
Oregano
Rosemary
Greek basil

Directions
- Preheat oven to 425 degrees
- Whisk dressing ingredients together
- Toss cauliflower and red pepper in dressing and spread in even layer on a baking tray
- Roast for 30 minutes until cauliflower starts to brown
- Let cool for 15 minutes then toss with feta and enjoy!
