Pumpkin Pancakes with Chocolate Chips and Banana {GF}
Ingredient List
1 cup Gluten Free raw oats (not instant)
1/4 cup almond flour
1/2 tsp baking powder
1/2 tsp baking soda
1 scoop collagen peptides (optional)
1/4 tsp cinnamon
1/2 cup milk of choice (I used coconut)
1/2 cup pumpkin puree
1 banana
1/4 cup almond flour

Directions
- Add oats to blender and blend until well grounded.
- Add almond flour, cinnamon, baking powder, collagen and baking soda. Blend.
- Add in milk, pumpkin and banana and blend until well mixed. Add more milk if needed.
- Heat medium skillet and add a spoonful of coconut oil. Pour in about 1/4 cup mixture for each pancake. Heat for about 2-3 minutes then flip and cook for another 2-3 minutes. Serve with sliced banana, chocolate chips and 100% maple syrup if you desire!
