Nourishing Lentil Soup

Ingredient List

1.5 cups dried lentils, rinsed
4 cups vegetable stock
1.5 t onion powder
1 t garlic powder
1 t paprika
1 t salt
1/2 t black pepper
1 medium onion, diced
3 gloves garlic, minced
3-4 stalks celery, chopped
1, 28 oz. can diced or crushed tomatoes (using crushed tomatoes will yield a more stew like consistency)
One bag spinach or other dark leafy greens of choice

1 lb. uncured bacon


  1. Rinse lentils well and add to stock pot or dutch oven with vegetable stock, and all spices.
  2. Bring to a boil, then reduce to a simmer until lentils are tender and most of the stock is absorbed, about 20-25 minutes.
  3. If adding bacon, slice into small pieces and cook in a frying pan until crispy.
  4. Remove bacon from a pan and set aside. Add onions to the same pan and cook until translucent. Add the garlic and stir just until aromatic. If not using bacon, simply add some avocado oil to the pan and cook just the garlic and onions in this step.
  5. Once lentils are tender, add celery, bacon, onions, garlic and tomatoes and continue to cook until celery is somewhat softened and flavors come together.
  6. Add in leafy greens and continue to simmer until wilted.
  7. Enjoy!
