Low Carb Zucchini Taco Boats
Ingredient List
1 large zucchini, sliced in half vertically
1 lb. organic, grass fed ground beef OR organic, free range ground turkey
1/2 jar organic salsa (no sugar added)
1 T chili powder
1 t cumin
1/2 t paprika
1/2 t garlic powder
1/2 t onion powder
1/2 t black pepper
1/4 t cayenne pepper
2 T water

Directions
- Preheat oven to 4oo degrees.
- Scoop out inside of zucchini and set the zucchini boats in a glass baking dish. Set aside the meat of the zucchini that you scooped out.
- Brown meat in a sauté pan with a little bit of avocado or olive oil, breaking the meat apart as it cooks. Drain the meat and put back into pan.
- Add the scooped out zucchini, spices, water and salsa to the meat and combine.
- Spoon mixture into zucchini boats and bake for 25 minutes or until zucchini is tender but not mushy.
- Enjoy with guacamole or sprinkle with shredded cheese!
