Low Carb Zucchini Taco Boats

Ingredient List

1 large zucchini, sliced in half vertically
1 lb. organic, grass fed ground beef OR organic, free range ground turkey
1/2 jar organic salsa (no sugar added)
1 T chili powder
1 t cumin
1/2 t paprika
1/2 t garlic powder
1/2 t onion powder
1/2 t black pepper
1/4 t cayenne pepper
2 T water


  1. Preheat oven to 4oo degrees.
  2. Scoop out inside of zucchini and set the zucchini boats in a glass baking dish. Set aside the meat of the zucchini that you scooped out.
  3. Brown meat in a sauté pan with a little bit of avocado or olive oil, breaking the meat apart as it cooks. Drain the meat and put back into pan.
  4. Add the scooped out zucchini, spices, water and salsa to the meat and combine.
  5. Spoon mixture into zucchini boats and bake for 25 minutes or until zucchini is tender but not mushy.
  6. Enjoy with guacamole or sprinkle with shredded cheese!
