Cinnamon Walnut Bread {Grain Free, GF}

Ingredient List

1.5 cups chopped walnuts processed into home made walnut butter OR 1 cup store bough walnut butter
1/3 cup almond flour
1 T. ground flaxseed
1/4 cup golden monk fruit sweetener(regular sugar, brown sugar or coconut sugar work too!)
4 eggs, beaten
1/2 tsp. baking soda
1/2 tsp. sea salt
1 tsp. cinnamon
1/4 cup dairy free chocolate chips (optional)


  1. Preheat the oven to 350 degrees
  2. Process the chopped walnuts in a high speed blender or food processor until a smooth butter forms. This may take 5 or more minutes. Scrape down the sides every minute. Add 1 T. neutral flavored oil if nut butter is too dry
  3. Beat walnut butter and eggs together until a smooth batter forms
  4. Add almond flour, flaxseed monk fruit sweetener, salt, baking soda and cinnamon and combine
  5. Stir in chocolate chips if using
  6. Pour mixture into a greased 5×9 inch loaf pan
  7. Bake for 45 minutes. Let cool for an additional hour before turning the loaf out of the pan
  8. Store in the fridge for up to 2 weeks
