Chickpea Pasta Salad {GF}

Ingredient List

1 package chickpea pasta
2 cups cherry tomatoes, cut in half
2 cups seedless cucumber, diced
1 package of feta

For the dressing:
1 T fresh lemon juice
3 T white wine vinegar
1/2 cup olive or avocado oil
1 tsp. garlic powder
1 tsp. dried oregano
1 tsp. dried basil
1/2 tsp. salt
1 tsp. sugar or honey


  1. Cook pasta according to package instructions. Drain, place back in pot with a drizzle of oil to prevent sticking
  2. Whisk dressing ingredients together until combined
  3. Toss pasta with cucumbers, tomatoes and feta
  4. Pour dressing over pasta and toss until combined
  5. Let marinate together in the fridge for at least an hour before serving
