Chewy Almond Flour Chocolate Chip Cookies

Ingredient List

2/3 cup butter, softened (preferably grassfed)
1/2 cup golden monk fruit sweetener (We like Lakanto brand)
1/2 cup original monk fruit sweetener
1 egg
2 teaspoons vanilla extract
2 3/4 cup almond flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup 70% or darker chocolate chips (We like Lily’s Brand)


  1. Preheat oven to 350 degrees F. Line two baking trays with a silicone baking mat or parchment paper
  2. Cream softened butter and sugar together in a standing mixer or with an electric mixer until combined
  3. Add vanilla and egg
  4. Add baking soda and salt, then slowly add flour until a dough forms
  5. Fold in chocolate chips with a spatula
  6. Take rounded tablespoons and roll into a ball with hands, placing on baking sheet 2 inches apart from each other
  7. Press several extra chocolate chips into the surface of each cookie if desired
  8. Bake for 10-15 minutes until desired brownness is achieved. I take mine out when they start to brown all over. Let cool on the trays fully before transferring to a container.
