Chana Masala
Ingredient List
2 medium ripe tomatoes, quartered
½ cup white onion
3-4 cloves garlic
1 Tbsp fresh lemon juice
1 Tbsp coconut oil, avocado or olive oil
2 tsp garam masala
¼ tsp coriander
¼ tsp cumin
1 tsp turmeric
¼ tsp black pepper
Dash salt
¼ tsp crushed red pepper or cayenne
2 cups canned chickpeas or dry cooked chickpeas
¼ cup fresh chopped cilantro

2 cups canned chickpeas or dry cooked chickpeas
¼ cup fresh chopped cilantro
Directions
Step 1. Combine tomatoes, onion, garlic and lemon juice in a food processor until thick and smooth.
Step 2. Heat oil in a medium sauté pan over medium. Add tomato mixture when oil begins to sizzle. Stir in all seasonings and mix well. Heat and continuing stirring until golden brown.
Step 3. Add about ¼ cup of water if needed to thin and bring to a simmer for about 5-8 minutes. Sauce should be a thick gravy consistency.
Step 4. Add chickpeas and coat well with sauce. Continue to heat for another 2-3 minutes.
Step 5. Remove from heat and serve with fresh cilantro and your favorite grain (rice, quinoa, buckwheat, kasha, Amaranth, millet)
