Black Bean Brownies

Ingredient List

1 15 oz can black beans, rinsed and drained well
3 eggs
3 T coconut oil (refined)
1/4 cup unsweetened cocoa powder
Pinch of salt
½ tsp baking soda
1 tsp vanilla extract
1/2 cup coconut sugar or monk fruit
1/2 cup dark chocolate chips
2 tbsp natural nut butter (peanut, almond, cashew, etc)


Preheat oven to 350.  Spray 8 X 8 pan with coconut oil. In food processor, process  black beans until smooth.  Add eggs, oil, cocoa, salt, baking soda, vanilla and sugar.  Process until smooth.  Add ½ chocolate chips and stir.  Transfer batter to pan and using a small spoon, drop small chunks of nut butter on top evenly.  Using a knife, spread nut butter into swirls.  Bake for 30-35 minutes or until toothpick comes out clean!

**Can also make these into cupcakes.  Simply scoop a spoonful of mixture into cupcake liners and bake for about 20 minutes.
